I wouldn't bet on a remaster, since it got it's "Next Gen Update" with the launch of the last gen consoles (contrary to the Ezio Trilogy, AC3 and Rogue). And playing through it right now on PS5, i have to admit it looks very good. Too good actually to justify a remaster, because literally the only thing would be the 60 fps.

Origins is leagues more an AC game than Odyssey was. I think it's a good hybrid of the AC franchise the open world Witcher style genre imo. Odyssey and Valhalla just leaned way more into the open world RPG stuff and they end up feeling like different games.
I think it will have a 60fps mode, but I also think it depends on what you consider your main console. I have an Xbox and a PS5, but my friends play on Xbox, so I really only use my PS5 for exclusives, meaning I get all my third party games on Xbox. If you don't really care and prefer performance over where you play it, get it on PS5.
